Neviere del vulcano di Roccamonfina, or snow cellar, was the only source of ice in the summer, in an era when refrigeration technology was not yet widespread. During the winter filled with fresh snow, pressed and insulated with chestnut branches, in the summer taken to cool drinks and white wines. Neviere, one of the oldest expressions of this land.
