Cabernet Sauvignon and Sangiovese
DESCRIPTION
Cabernet Sauvignon and Sangiovese perfectly integrated, give life to an immediate and extremely versatile wine. The growing season began at the usual times after a winter period typical of our areas with minimum temperatures below zero in the first three months of the year. Budding occurred a few days earlier than the standards of the territory. The first four months of the year were characterized by lower than average rainfall with about one hundred and seventy millimeters from January to April. Spring was characterized by a dry climate with temperatures a few degrees above the seasonal average, especially in the month of May. In summer, the lack of rain and scorching temperatures characterized the months of June, July and most of August. In the red varieties, thanks to the rains at the end of August and the beginning of September, no dehydration of the grapes was found and the good temperature variations favored a beautiful aromatic and acidic synthesis. The harvest of the red varieties began in the first days of September, the Sangiovese about two weeks later, concluding the harvest in mid-October with the late varieties such as Cabernet Sauvignon. The quality was good in all the company areas with excellence in the highest areas of the Montalcino territory. Hot year until the month of August which, thanks to the rains and good pre-harvest temperature variations, had a good conservation of the fruit and a nice tannic balance. Ruby red color, intense, fresh and fruity aroma defined by small currants, plum and wild strawberry; in the mouth the structure is soft with sweet tannins and supported by good acidity; persistent and pleasant finish. Wine suitable for any occasion, it pairs very well with meat-based dishes or mature cheeses.
